The great thing about muffins is that they are so lightly stirred together and baked. So they are ideal for guests or the quick visit. Or pretty packed as a Christmas gift.Lay out a muffin tin with 6 large muffin molds.


Whip the soft butter with the sugar, the vanilla extract and the salt for several minutes. Then stir in the two eggs one at a time.
